What we mean by it and why it matters to us

“Clean label” gets used a lot.

For us, it simply means food made with ingredients you recognise and processes you understand.

At S for Sausage, clean-label is not about trends or perfection. It’s about making sausages the way we believe everyday food should be made, without unnecessary extras and without hiding behind vague ingredient lists.

For us, clean-label starts at the ingredient level.

It means every ingredient we use is clean in itself, not just the finished sausage. This includes spices, sauces and seasonings. Nothing is there by accident and nothing is there to make processing easier.

At S for Sausage, clean label means:

  • No preservatives of any kind
  • No added colours
  • No added flavours
  • No E numbers
  • No enzymes or processing aids
  • No fillers

If an ingredient appears on the label, it is there for a reason.

Clean-label for us is not just about removing things. It is about choosing better inputs.

We focus on:

  • Quality meat, thoughtfully selected
  • Whole, recognisable ingredients
  • Premium seasonings and ferments chosen for depth and balance
  • Naturally functional ingredients used thoughtfully to support flavour and texture
  • Organic ingredients where possible
  • Locally sourced ingredients where it makes sense

We also use ingredients like wild-harvested wakame from Otago, valued for its natural umami depth and mineral richness, helping build flavour without relying on additives.

Also organic chia seed is used for its natural binding properties rather than processed additives.

Flavour and structure are built through ingredients and technique, not shortcuts.

We are not trying to reinvent food.

We are taking a familiar staple and holding it to a higher standard, one that feels more aligned with how many people want to eat now.

For us, clean-label is not about restriction.

It is about clarity, intention and respect for ingredients.

Our standard is simple.

If we would not use an ingredient ourselves, we do not use it in our sausages.

Clean label does not mean plain, bland or safe for the sake of it.

Our sausages are bold, modern and flavour driven, built with spices, herbs, ferments and natural umami. We rely on real inputs to create depth, not shortcuts.

Good flavour does not need hiding.
